Bánh Kẹp Lá Dứa - Uyen Thy's Cooking
Ingredients
2 Eggs
2 cups All-Purpose Flour
1 can (13.5 oz or 1 3/4 cups) Coconut Milk
1/2 cup vegetable Oil
1/2 cup-2/3 cup White Sugar (add more sugar to please your palate)
2 bags (4 1/2 teaspoons) Alsa Baking Powder
1/2 teaspoon Salt
1/2 teaspoon Pandan Extract

Mixing Flour
In a large bowl, beat eggs with hand beater until fluffy.
Stir in flour, coconut milk, vegetable oil, sugar, baking powder, salt and pandan extract, just until smooth.
Transfer the mixture into the waffle bottle.

Making Waffle
Preheat waffle iron.
Brush or spray preheated waffle iron with vegetable oil or non-stick cooking spray.
Pour mix onto hot waffle iron.
Cook for a minute or until golden brown.
Let it cool down a little bit then serve. Any left over, you can freeze it for a few weeks. To make it crispy again, just reheat it to a crisp in the toaster oven.
